This egg whites mushroom omelette with roasted tomatoes is a great way to get the proteins in our anti inflammatory diet. Here we are using egg whites instead of the whole egg to cut down on cholesterol. So I recommend you buy a carton of egg whites rather than go to the trouble or separating them.


Serves 4 –

  • 8 egg whites
  • 1 clove garlic (sliced)
  • thyme
  • 2 tomatoes (half cut length wise)
  • 100 g of mushrooms (sliced length wise)
  • 2 tablespoons olive oil
  • salt and pepper
  • chopped spring onion to garnish

Method –

  • Preheat a griddle and a sauté pan.
  • Insert slices of garlic and some thyme in the tomatoes, season with salt and pepper. Put one tablespoon of olive oil and the tomatoes in the griddle cut face down until getting nice grill marks, about seven minutes.
  • Put 2 tablespoons of oil in the sauté pan and the mushrooms, season with salt and pepper. Leave in the pan until nice and golden. As soon as the mushrooms turn golden add the eggwhites and until cooked to your liking .
  • Serve the omelette with the tomatoes on top.

Tip –

  • When cooking with a griddle, you need to preheat it at medium  heat for about five to 8 min depending on how seasoned it is.
