With this tilapia summer salad you have a quick and uncomplicated recipe for you to try and help you stay inflammation free. This salad is tasty and combines fresh and fruity flavours. Try it!


Serves 4 –

  • 4 tilapia fillets
  • 1 bag of mixed spinach and kale
  • 2 apricots
  • 4 tomatoes
  • olive oil
  • salt and pepper
  • red wine vinegar

Method –

  • Preheat a sauté pan. Season the tilapia fillets with salt and pepper.
  • Pour a bit of olive oil in the sauté  pan and the tilapia fillets.
  • Once the have been cooked 3/4 (the thickness of the fish looks whitish), flip the fish over and take the pan out of the stove otherwise it will be overcooked.
  • Slice the apricots and tomatoes.
  • To plate the dish, put some salad mix, apricot and tomato slices.
  • Mix salt, pepper 1 tbsp of vinegar and 3 tbspn of olive oil.
  • Mix the vinaigrette  with the salad, tomatoes and apricots.
  • Put the fish on top and you are ready to go!

Tips –

  • You can add any other summer fruit to the salad.
