This delicious recipe for avocado and mint soup will give a flavoursome twist to your summer dining.

Serves 6 –

  • 3 avocados
  • 300g thick dairy-free yogurt
  • mint sprigs
  • half cup of olive oil
  • juice of 1 lime
  • salt and pepper
  • ice cubes
  • toasted pumpkin  seeds
  • water

Method –

  • In a food processor blend: avocados, yogurt, mint sprigs,  lime juice, olive oil, and ice cubes.
  • Add some water if needed. Salt and pepper to taste.

Tips –

  • Serve and garnish with pumpkin seeds and olive oil on top
  • Non-vegans could use Greek yoghurt which contains less lactose than other dairy yoghurts
