Anti-inflammatory recipe 18

Gazpacho is the classic Spanish starter. It is really refreshing in summer time, easy to make, delicious and highly nutritious.

Serves 6 –

  • 1 kg tomatoes, peeled and seeded
  • 1 green pepper
  • 1 cucumber
  • 1/2 onion
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons vinegar of your choice
  • 1 slice toast (cut into squares)
  • 1 boiled egg (diced)

Method –

  • In a food processor blend the tomatoes, cucumber,  green pepper, onion, vinegar, olive oil and ice cubes. Add some water if needed.

Tips –

  • Serve with diced boiled eggs, and bread or toast on top.
