Avocado gives you the benefits of monounsaturated fat in the form of oleic acid. It’s also rich in protein with about 4g per fruit, provides more potassium per gram than a banana and contains less than 1g of sugar. Half an avocado also gives you about 1/4 of you daily fibre requirement. Combined with all the other healthy ingredients this really is a super food salad  – a super quick, super greens minted salad.

Avocado, cucumber and quinoa minted salad

Serves 4 –

  • 1 large head of broccoli
  • 2 ripe avocado pears (peeled, stoned and cut into cubes)
  • 2 cucumbers (cubed or small cut into small wedges)
  • 200g bag of alfalfa sprouts
  • handful fresh mint leaves
  • 100g of dairy free feta cheese (cubed)
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons cider vinegar or juice of one lime
  • salt and pepper

Method –

  • On the hob bring a pan of water to the boil.
  • Divide the broccoli into florets. Plunge into the boling water and blanch for 2 minutes. Drain and leave to cool.
  • In a large bowl place the broccoli, avocado, cucumber, alfafa sprouts and mint leaves and gently toss together.
  • Make the dressing by whisking together the olive oil and cider vinger/lime juice in a small bowl and adding salt and pepper to taste. Pour over the salad, add the goats cheese and gently stir in. Serve.

Tips –

  • Tofu makes a good alternative to dairy-free feta
