Marlon’s chipotle chicken is, as you might have guessed a favourite creation of one of our editors. This meal has a very subtle spicy flavour.  It looks and tastes like you’ve spent hours in the kitchen when in reality it is very quick to prepare – perfect for a cheat’s dinner party.

Serves 4 –

  • 4 organic chicken thighs (skinless)
  • 2 tablespoon olive oil
  • 500 g Fresh or canned tomatoes (fresh and ripe are best)
  • 1 /4 teaspoon ground cinnamon
  • 2 chipotle chillies
  • 1 teaspon unsweetened dark chocolate
  • 1/2 small white onion
  • 1 large clove of garlic (chopped)
  • Sea salt
  • 500 ml chicken stock

Method –

  • If using fresh tomatoes  put them under the grill until roasted and remove any burnt bits. This will  add lots of flavour. Set aside.
  • In a small frying pan on a medium heat brown the clove of garlic and the onion. No oil needed
  • Blend the tomatoes, garlic, onion, cinnamon chocolate and chipotle. Set aside.
  • In medium casserole heat the olive oil, being careful not to burn it
  • Season the chicken thighs with salt and pepper and brown the chicken on both sides. Set aside.
  • Pour the tomato mixture in the casserole where you browned the chicken and let it reduce at a medium heat. It’s ready when scraping the bottom of the pan means you can see very little liquid, almost like a paste.
  • Add the chicken stock and reserved chicken and let simmer for 15 min lid off. Season with salt if necessary

Tips –

  • Using a splatter guard when reducing the tomato sauce is highly recommended.
  • Serve with toast, a baguette to dip in the sauce.
