This is a very easy recipe for a special breakfast – perfect for when you have friends or family staying overnight. Apples, the main ingredient, contain quercetin to help your immune system and recent studies have shown that they can help keep the connections of the brain intact, protecting from Parkinson’s. Chia seeds, a source of sustainable energy for the body, provide fibre, Omega 3 fats and essential minerals.


Serves – 2

  • 2 crisp green apples e.g. Granny Smiths (washed, cored and shredded)
  • 4 tablespoons thick dairy-free yoghurt
  • 2 tablespoons dried cranberries
  • 1 tablespoon chia seeds (presoaked in water or almond milke for 20 minutes)
  • 3 tablespoons sliced almonds
  • 1 tablespoon agave nectar
  • 1/2 teaspoon cinnamon
  • a few whole almonds to decorate

Method –

  • Mix all the ingredients together in a big bowl
  • Separate into bowls to serve
  • Decorate with a few whole almonds

Tips – 

  • Non-vegans could also try Greek yoghurt because the straining of the raw yughurt during production removes a lot of the lactose.
  • Other vegan choices include silken tofu or coconut cream
